Filet Mignon in Cabernet Sauvignon Reduction Recipe

Ingredients
  • 1 1/2 pounds filet mignon, thinly sliced
  • 1/2 small yellow onion, finely minced
  • 2 cups beef broth
  • 1 cup dry red wine (I use Cabernet Sauvignon)
  • 3 Tbsp butter, divided
  • 1 Tbsp all-purpose flour
  • 1 Tbsp extra virgin olive oil (EVOO)
  • 2 rounded tsp chopped garlic
  • 1/4 tsp dried thyme
  • Freshly ground black pepper, to taste
Directions
  1. Season filet strips lightly with pepper, then set aside.
  2. Heat a large skillet on stovetop, over medium heat.
  3. Add 2 Tbsp butter and melt. 
  4. Add onions and thyme and sauté until tender (about 4-5 mins). 
  5. Add garlic and sauté for 30 secs. 
  6. Slowly add flour, constantly stirring for about 1 min.
  7. Add broth and wine then bring to a boil.
  8. Reduce to medium-high heat, then simmer until reduced to about 1 cup, stirring occasionally.
  9. After the sauce has been simmering for about 5 mins, heat a large cast iron skillet over medium-high heat on stovetop.
  10. Add remaining butter and EVOO and heat.
  11. Working in batches, add filet strips and sauté until brown on the outside but still pink in center, about 2-3 mins on the first side. Watch for juice to develop on the top side, then turn and continue to cook to desired temperature (anywhere from 30 secs up to 2 mins). 
  12. Transfer filet strips to a plate and set aside.
  13. Transfer reduced sauce to the cast iron skillet and heat for 1-2 mins over medium heat, constantly whisking. 
  14. Whisk in juices from the resting filet strips.
  15. Arrange filet strips on individual plates, then spoon sauce over the top.
