Almond Flour Bread

My first attempt at a bread *substitute* was super easy, quick, and turned out so well!

It’s super soft, very dense, and I can just taste the nuttiness from the almond flour and the coconut from the coconut 🥥 oil.

I’ve tried it two ways so far:
* Toasted then topped with butter 🧈 and cinnamon
* Topped with peanut 🥜 butter and accompanied by unsweetened vanilla almond milk 🥛

Hubby joked that I should be so proud of myself. I think making bread 🍞 took me to a whole different level of esteem in his eyes 🤩. Ha!!! 🏅

I cut mine into 9 slices as it makes a very shallow loaf and I wanted thick sandwich bread-size pieces. Using as the standard shallow loaf and cutting from the top instead, you should get 15 slices out of it.


  1. Heat oven to 350 F.
  2. Lightly spray loaf pan with EVOO.
  3. Place in a mixing bowl and mix together: 2 cups almond flour, 2 tsp baking powder, 1 tsp salt, and 1/4 cup psyllium husk.
  4. Add 4 eggs, 1 5/8 oz melted coconut oil, and 1/2 cup warm water then mix until well combined (do not overmix).
  5. Pour batter into loaf pan.
  6. Bake for 30 mins (until golden on the outside and cooked through the middle).
  7. After removing from oven, allow to cool in the loaf pan for 1 hr.
  8. Transfer to baking rack to dry for 2 hrs (if you skip this step, the bottom of your loaf will get mushy in the loaf pan).
  9. Slice, or leave whole, then transfer to an airtight container and store in the fridge for up to 2 weeks.
