BBQ Chicken Meatballs

We all really enjoyed this one!!! I make them somewhat small (see scooper in left column pic above), and they’re good. 😉

I served w/ Roasted Broccoli (& Crescent Rolls for the carb-lovers in my house)…

TIPS: If you cut recipe in half, be sure to still use the full amount of the barbecue sauce that the recipe called for in the spread on the bottom of the IP step because you want to avoid a *food burn incident* 🤩 Also, if you want to make yours bigger, that’s fine and doesn’t change the cooking time at all.

NOTE: You can make this a Keto, Low Carb, Paleo, or Whole30 recipe by buying (or making) an eating plan-friendly BBQ sauce. Honestly, I’ve never tried one of those sauce versions so I’m not sure what it would taste like??

BBQ Chicken Meatballs Recipe

Ingredients
  • 2 lbs ground chicken
  • 1 cup + 2 Tbsp barbecue sauce, divided (10 Tbsp for meatballs + 8 Tbsp for coating inner pot’s bottom)
  • 6 Tbsp coconut flour
  • 2 pinches freshly ground sea salt
  • 2 pinches freshly ground black pepper
Directions
  1. In a large bowl, combine 2 lbs ground chicken, 10 Tbsp BBQ sauce, 6 Tbsp coconut flour, 2 pinches (about 1/8 tsp) salt, and 2 pinches (about 1/8 tsp) black pepper then mix together until well combined. Honestly, mixing w/ gloved hands is your best bet here…
  2. Roll into 30 (or less depending on the size you choose) meatballs. Set meatballs aside on a plate until all are rolled.
  3. Add remaining 8 Tbsp BBQ sauce to the bottom of the Instant Pot’s inner pot, spreading out as evenly as possible.
  4. Place meatballs at bottom of inner pot, layering as evenly as possible.
  5. Seal lid and select PRESSURE COOK (or MANUAL) for 10 mins.
  6. When cooking cycle ends you can opt for either a natural release or quick release. This really depends on how much of a hurry you’re in to eat!!
  7. When pressure pin drops, remove the lid, then select SAUTÉ – NORMAL and cook for 5 additional mins, until sauce thickens.
  8. Stir meatballs gently to cover each in sauce.
