BBQ Tri Tip Chop Salad

Our take on Stonefire’s BBQ Chopped (with Tri Tip). 🥩🥗

This was definitely a joint effort. Hubby manned the grill for the tri tip and corn and expertly sliced up that tri tip after.

BBQ Tri Tip Chop Salad Recipe

Ingredients
  • 1/2 head iceberg lettuce, chopped
  • 1/2 head romaine lettuce, chopped
  • 1 cup cooked and drained black beans (canned)
  • 2 ears fresh corn, cooked and corn kernels removed
  • 3/4 cup chopped red cabbage
  • 3/4 cup shredded carrots
  • 1/2 cup Monterey Jack shredded cheese
  • 1 large tomato, chopped
  • 1 1/2 cups chopped grilled tri tip (seasoned w/ Montreal Steak seasoning), tossed with 1 1/2 tsp BBQ sauce
  • 3 Tbsp green onions, chopped
  • 3 Tbsp fresh cilantro, chopped
  • 1 cup crumbled tortilla chips/strips
  • 1 cup buttermilk ranch dressing
  • 3 Tbsp BBQ sauce
Directions
  1. Toss together 1/2 head chopped iceberg and 1/2 head chopped romaine in a large bowl.
  2. Place 1 cup beans, corn kernels, 3/4 cup cabbage, 3/4 cup carrots, 1/2 cup cheese, and chopped tomato in sections atop lettuce in wedges like a wheel. 
  3. Pile 1 1/2 cups tri tip tossed in BBQ sauce in center.
  4. Chill until serving time.
  5. Just before serving, sprinkle with 3 Tbsp green onions, 3 Tbsp cilantro, and 1 cup tortilla strips.
  6. In a small bowl, blend 1 cup ranch with 3 Tbsp BBQ sauce.
  7. Toss salad in dressing.
