Cajun Salmon with Lemon Dill Sauce

This was bomb! My husband finished his plate almost before I could ask if he liked it.

This fish could definitely stand on its own but the lemon dill sauce really complements the Cajun seasoning.

Hubby isn’t such a fan of lemon but liked the sauce the way I made it.

TIPS:

Make this recipe with Tilapia… Just choose 4 (4 oz) filets and bake at 350 for about 20 mins.

Make this recipe with Orange Roughy… Just choose 2 (7 oz) filets and bake, covered with aluminum foil, at 400◦ for about 23 mins.

NOTE: You can use regular mayo instead vegan spread. I just don’t like mayo…

Cajun Salmon with Lemon Dill Sauce Recipe

Ingredients
  • 3 (5 oz) salmon filets
  • 1 lemon, thinly sliced
  • 4 Tbsp sour cream
  • 2 Tbsp Best Foods Vegan Dressing & Spread
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp Cajun seasoning (see my Cajun Seasoning recipe)
  • 2 tsp dried dill
  • 1/4 tsp freshly ground sea salt
  • 1/8 tsp freshly ground black pepper
  • 1 pinch garlic powder
  • extra virgin olive oil (EVOO) spray
Directions
  1. Preheat the oven to 425 F.
  2. Lightly spray a 9″ x 13″ baking dish with EVOO.
  3. Combine 1 Tbsp Cajun seasoning, 1/4 tsp salt, and 1/8 tsp black pepper in a ramekin.
  4. Season filets w/ seasoning blend then place in baking dish.
  5. Top filets with lemon slices (see pic above).
  6. Bake for 20-30 mins, until salmon is flakey.
  7. While salmon is baking, make the sauce: In a small bowl, mix together 4 Tbsp sour cream, 2 Tbsp vegan spread, 2 Tbsp lemon juice, 2 tsp dill, and 1 pinch (about 1/16 tsp) garlic powder.
  8. When salmon is done cooking, remove lemon slices and plate the salmon, topping with sauce.
