Chicken & Bacon Ranch Casserole

This casserole was yummy. I imagine it would also be yummy with *true* ranch dressing for those of you who eat it. 😋

Chicken & Bacon Ranch Casserole Recipe

  • 5 cups broccoli florets
  • 4 cups cooked shredded chicken (see my Shredded Chicken recipe)
  • 12 oz (pre-cooked weight) cooked bacon bits (see my Bacon Bits recipe)
  • 3 tsp minced garlic
  • 1 cup freshly shredded Cheddar cheese (divided)
  • 1 cup freshly shredded mozzarella cheese (divided)
  • 1 cup Ranch dressing
  1. Preheat oven to 375 F.
  2. Add 5 cups broccoli florets by adding to a large stock pot filled about 1/2 way and bring to a boil on stovetop.
  3. Once at a boil, turn down to simmer for about 2 mins, until broccoli is bright green.
  4. Drain broccoli.
  5. In a large bowl (or stand mixer), mix 4 cups cooked shredded chicken, bacon bits from 12 oz cooked bacon, blanched broccoli, 3 tsp minced garlic, 1 cup Ranch dressing, 1/2 cup shredded Cheddar cheese, and 1/2 cup Mozzarella cheese until well incorporated.
  6. Transfer mixture to a 9″ x 13″ baking dish.
  7. Top with remaining 1/2 shredded Cheddar cheese and remaining 1/2 shredded Mozzarella cheese.
  8. Bake for 15 mins on center rack, until hot and bubbly.
