Corned Beef Brisket Platter Recipe

  • 2 1/2 lbs boneless corned beef brisket with seasoning packet
  • 1 bunch of carrots (about 7 small- to medium-sized carrots), cut into 1-inch pieces
  • 1 1/2 lbs mini gold potatoes, cut into halves
  • 1 head of green cabbage, cut into 8 wedges
  • 1 cup water
  • 4 Tbsp butter, melted
  • 1 tsp freshly ground black pepper
  1. Place 2 1/2 lbs brisket, centered, at bottom of inner pot of Instant Pot (IP).
  2. Pour 1 cup water over brisket.
  3. Pour seasoning packet (from brisket package) over brisket.
  4. Seal lid and select PRESSURE COOK (or MANUAL) for 66 mins.
  5. When cooking cycle completes, do a quick release and remove the lid.
  6. Transfer cooked brisket to a large cutting board and set aside to rest.
  7. Add to IP’s inner pot: 1 1/2 lbs halved potatoes, pieces of 1 bunch of carrots, and 8 wedges from 1 head of cabbage.
  8. Seal lid and select PRESSURE COOK (or MANUAL) for 7 mins.
  9. When cooking cycle completes, do a quick release then remove the lid (always away from you).
  10. Carve brisket, against the grain, into thin slices.
  11. In a small bowl, whisk together 4 Tbsp melted butter and 1 tsp black pepper.
  12. Transfer brisket to center of a serving platter. Place veggies in a circle surrounding the brisket.
  13. Drizzle butter mixture over veggies.
