I’m not typically a fan of friend chicken so these baked tenders really work for me!
Down Home Chicken Tenders Recipe
Ingredients
- 1 1/4 lbs boneless, skinless chicken tenders
- 4 cups corn flakes
- 2 eggs
- 1/2 cup 2% milk
- 1/4 cup honey
- 1 Tbsp fresh parsley, chopped
- 1 tsp paprika
- 1/2 tsp pink Himalayan salt
- 1/4 tsp ground black pepper
- 1/4 tsp onion powder
- extra virgin olive oil (EVOO) spray
Directions
- Preheat oven to 425◦ F.
- Cover a baking pan with foil and spray lightly with EVOO.
- In a small bowl, beat 2 eggs.
- Add 1/2 cup 2% milk and whisk to combine.
- Pour milk mixture onto a shallow plate and set aside.
- In a gallon size Ziplock bag, add 4 cups corn flakes, then seal and *pound* until coarse crumbs form then set aside. I use my French rolling pin to apply rolling pressure to crumble ingredients together.
- In a small ramekin, mix together 1 tsp paprika, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp onion powder.
- Add 1 tsp spice mixture to corn flake crumbs bag and toss together.
- Pour crumb mixture onto a shallow plate.
- Season 1 1/4 lbs chicken tenders with remaining 1 tsp spice mixture.
- Dip each tender into the milk mixture, then allow excess to quickly drip off.
- Roll each tender in crumb mixture until well-coated.
- Place each coated tender on baking pan, spaced evenly, in a single layer.
- Spray tenders moderately with EVOO.
- Bake 15 mins, until chicken is 165◦ F.
- Sprinkle tenders evenly with 1 Tbsp parsley then plate.
- Drizzle 1/4 cup honey evenly over tenders then serve.
