Garlic Cheese Herbed Cauliflower Crown

So, so good. This recipe is a keeper for sure! 😋😋😋

TIPS: Leave out the Parmesan to make this recipe LactoVeg, LactoOvoVeg, OvoVege, Paleo, Vegan, or Whole30.

Garlic Cheese Herbed Cauliflower Crown Recipe

  • 1 head of cauliflower, washed and cored (see bottom right pic above)
  • 1/3 cup extra virgin olive oil (EVOO)
  • 2 Tbsp grated Parmesan cheese
  • 3 tsp minced garlic
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 1/2 tsp freshly ground pink Himalayan salt
  • 1/4 tsp freshly ground black pepper
  1. Preheat oven to 400 F.
  2. In a small bowl, whisk together 2 Tbsp Parmesan, 1/3 cup EVOO, 3 tsp minced garlic, 1 tsp basil, 1 tsp parsley, 1 tsp thyme, 1/2 tsp salt, and 1/4 tsp pepper.
  3. Place the cauliflower upside down in a baking dish with lid that is large enough to hold it, then use a brush to transfer 1/2 of the sauce over this bottom side of the cauliflower, spreading it around the core and into crevices. (see middle left pic above)
  4. Turn the cauliflower over and brush remaining sauce over it. (see middle right pic above)
  5. Bake, covered, for 40 mins, until tender.
