Garlic Sautéed Spinach

Pictured on the shrimp plate above is a 1/2 serving from this recipe.

This is probably the 4th time I’ve attempted this recipe. I even have a note next to the old recipe: NO GO (b/c I wrote it off in frustration!).

However, I gave it another shot. Tonite I used the old recipe as inspiration only and combined it w/ another recipe also used as inspiration only. And… the outcome here was GOLD!

Served with my Garlic & Pepper Shrimp and a 50/50 blend drizzled w/ Champagne vinaigrette.

Garlic Sautéed Spinach Recipe

Ingredients
  • 1 1/2 cups fresh baby spinach, trimmed of stems
  • 1 tsp minced garlic
  • 1 tsp extra virgin olive oil (EVOO)
Directions
  1. In a large skillet, heat 1 tsp EVOO.
  2. Add 1 tsp minced garlic and sauté for 30 secs.
  3. Slowly add 1 1/2 cups fresh baby spinach, tossing to coat.
  4. Cover and sauté for 1 min.
  5. *Flip* spinach and sauté uncovered for 1 min.
