Garlic & Thyme Roasted Baby Red Potatoes Recipe
Ingredients
- 1 1/2 lb baby red potatoes, halved
- 2 Tbsp + 1 1/8 tsp extra virgin olive oil (EVOO)
- 1 Tbsp + 1 1/2 tsp chopped garlic
- 3/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 tsp dried thyme
Directions
- Line a large baking sheet with parchment paper, then set aside.
- Adjust oven racks so that one is in the upper 1/3 of oven and another is in the lower 1/3 of oven.
- Preheat oven to 450° F.
- In a large Ziploc back, toss halved 1 1/2 lb baby red potatoes with 2 Tbsp + 1 1/8 tsp EVOO, 1 Tbsp + 1 1/2 tsp chopped garlic, 3/4 tsp kosher salt, 1/4 tsp ground black pepper, and 1/4 tsp thyme until equally well-coated.
- Place seasoned halved potatoes in a single layer – cut side down – on prepared baking sheet.
- Bake 25-30 mins, until crisp and golden brown on the bottom, rotating baking sheets from front to back and from top to bottom about 13 mins in.
