Honey Herb Glazed Carrots

Finally perfected the Honey Herb Carrots I’ve been tweaking over and over to get just right!!!

You’ll want to serve this one immediately after preparing…

TIPS: To make this a Whole30 recipe, omit the honey. To make this an OvoVege or Vegan recipe, sub the honey for agave nectar and sub the butter for a vegan butter without trans fat that has an avocado oil or olive oil base.

Honey Herb Glazed Carrots Recipe

Ingredients
  • 1 lb baby carrots
  • 1 cup low-sodium chicken broth
  • 1/3 cup honey
  • 2 Tbsp butter
  • 1 tsp dried parsley
  • 1 tsp dried thyme
Directions
  1. Add 1 cup broth to inner pot of Instant Pot.
  2. Add 1 lb carrots.
  3. Close lid, set to SEAL, and select Pressure Cook (or Manual) for 8 mins.
  4. When cooking cycle is done, do a quick release by setting to VENT.
  5. In a large skillet on stovetop, melt 2 Tbsp butter over medium heat.
  6. Add 1/3 cup honey, stirring constantly until fully incorporated into the butter.
  7. Add 1 tsp parsley and 1 tsp thyme and stir in.
  8. Add 1 lb cooked carrots and stir in.
