Honey Vanilla Rainbow Fruit Salad

Had a great gathering today in celebration of my father-in-law’s 80th. Tried out this newly crafted recipe: Honey Vanilla Rainbow Fruit Salad!!!

It was scrumptious! My father-in-law finally told me I had to take the fruit salad off the table or he would keep eating it. 😂 It was my mom’s and my favorite, too. 

TIPS: To make this recipe Paleo, simply omit the banana. To make this recipe Whole30, omit the honey.

Honey Vanilla Rainbow Fruit Salad Recipe

  • 16 oz strawberries, quartered
  • 5 oz mandarin oranges, drained
  • 10 oz pineapple chunks, drained
  • 8 oz green seedless grapes
  • 16 oz blueberries
  • 3 medium bananas
  • 1/2 cup fresh squeezed orange juice (about 1 orange’s worth)
  • 6 Tbsp honey
  • 1 tsp vanilla extract
  1. Prep fruits and squeeze the orange.
  2. In a large bowl, combine all fruit, except for bananas.
  3. In a small bowl, combine in order: 6 Tbsp honey, 1 tsp vanilla, and 1/2 cup juice, stirring until well blended (when the honey is dispersed).
  4. Pour dressing over fruit mixture and gently scoop fruit from bottom of bowl to top a few times to disperse the dressing.
  5. Cover with plastic wrap and refrigerate until ready to serve.
  6. Just before serving, slice the bananas and add to fruit mixture, then VERY gently scoop a few large spoonfuls of fruit from the bottom of the bowl to the top.
  7. Serve using a slotted spoon (unless you want the excess drippiness in your plate/bowl).
