Lentil Tikka Masala

Vegetarian nite requires gettin’ crafty. I don’t have much of a meatless repertoire for meals that fall w/in my various eating goals of the last 2 years.

And… I’m darn proud of this one! My husband started eating from the pot w/ a look of rapture on his face. 😆

I had planned to serve mine over brown rice but must have already eaten it w/ something else. So, I had to steal some of my boys’ Thai Jasmine Rice.


Lentil Tikka Masala Recipe

  • 1 (15 oz) can diced tomatoes (DO NOT DRAIN)
  • 1 1/2 cups uncooked green lentils
  • 1 1/2 cups vegetable broth
  • 1 small yellow onion, chopped
  • 1/2 yellow bell pepper, chopped
  • 1/2 cup lite coconut milk
  • 2 Tbsp butter
  • 3 tsp minced garlic
  • 2 tsp garam masala (see my Garam Masala seasoning recipe)
  • 1 1/2 tsp freshly ground sea salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/3 tsp ground ginger
  • 1/4 tsp cayenne pepper
  1. Set Instant Pot to SAUTÉ – NORMAL and allow to heat for at least 30 secs.
  2. Add 2 Tbsp butter to inner pot and melt.
  3. Add chopped 1 yellow onion and chopped 1/2 yellow bell peppers, then sauté until veggies begin to soften.
  4. Add 3 tsp minced garlic, 2 tsp Garam Masala seasoning, 1 1/2 tsp salt, 1 tsp coriander, 1 tsp cumin, 1 tsp turmeric, 1/4 tsp cayenne, and 1/3 tsp ginger then continue to sauté for 1 min.
  5. Add 1 – 15 oz can of undrained diced tomatoes, 1/2 cup lite coconut milk, 1 1/2 cups uncooked green lentils, and 1 1/2 cups vegetable broth then stir well to combine.
  6. Close the lid and set to SEAL.
  7. Cook on PRESSURE COOK (or MANUAL) for 15 mins.
  8. When cooking cycle completes, allow a natural release for 10 mins, then do a quick release of any remaining pressure and remove lid.
  9. Stir then plate.
