I LOVED this! My boys weren’t sure about the peel being included. I actually ate 2 pieces – it’s been a tough week!
Hubby was certain you’d be able to taste the EVOO, but no.
Makes an 8×8 and was super yummy. May not be everyone’s thing, but I like it.
Meyer lemons are supposedly hard to find in the store. Thankfully, some of us are blessed w/ a tree on premises.
TIPS: I purposely tried to keep this recipe as low as possible in added sugar for myself. For a sweeter cake, add additional granulated sugar, to taste, and 1 tsp pure vanilla extract stirred into yogurt before adding into food processor OR sub vanilla Greek yogurt. You can also dust the finished product w/ powdered sugar, to taste. This would also be pretty w/ some lemon zest on top of the powdered sugar!
Meyer Lemon Yogurt Cake Recipe
Ingredients
- 3 large eggs
- 1 large Meyer lemon
- 1 3/4 cups unbleached all-purpose flour, sifted
- 1 1/4 cup granulated sugar
- 1/3 cup extra virgin olive oil (EVOO)
- 1/3 cup nonfat plain Greek yogurt
- 3 tsp baking powder
- 1/4 tsp pink Himalayan salt
- EVOO spray
Directions
- Preheat oven to 350° F.
- Liberally spray an 8″ x 8″ baking dish w/ EVOO. Don’t forget to spray up the sides, too!
- Slice 1 large Meyer lemon into 6 wedges then remove any remaining stem and seeds.
- Add to a large food processor, in this order: 6 trimmed and de-seeded Meyer lemon wedges, 3 cracked eggs, 1 3/4 cups sifted unbleached all-purpose flour, 3 tsp baking powder, 1/4 tsp pink Himalayan salt, 1/3 cup EVOO, 1/3 cup nonfat plain Greek yogurt, and 1 1/4 cup granulated sugar.
- Pulse until just smooth. You want that peel broken up, but try not to over-blend!
- Pour batter into prepared baking dish.
- Bake 50 mins, until toothpick inserted in center comes out clean.
- Remove from oven and allow to cool for 20 mins, then transfer to a wire rack to fully cool.
