Boston Cream Pie

My first attempt at a Boston Cream Pie…

On Father’s Day 2023, Dad requested one for next Father’s Day. I figured: why wait? – and made one for dessert for after our first meal together at my house, just over a week after Mom passed (b/c we can all use a treat right now!).

Not as scary as I thought, but probably mostly b/c I had our Sous Chef (The OG) do the cutting of my cake to get the 2 layers. 🔪😅


Shortcut Boston Cream Pie Recipe

  1. Bake 1 (15 oz) box yellow cake mix according to package directions for a round cake pan.
  2. Once cake has fully cooled, cut in half horizontally.
  3. In a medium bowl, whisk 3.4 oz instant vanilla pudding into 1 cup 2% milk, until thickened.
  4. Fold in 1 1/2 cups Cool Whip and 1/2 tsp vanilla.
  5. Place bottom half of cake on a serving platter.
  6. Spread pudding mixture over this bottom half of cake, leaving about 1 inch on the outside rim uncovered by spread.
  7. Place top half of cake over pudding spread and gently press down so that pudding mixture in middle spreads to edges of cake.
  8. In a microwave-safe small bowl, microwave 1 Tbsp butter and 1 oz unsweetened chocolate in 10 second increments, until melted.
  9. Stir into chocolate mixture: 3/4 cup confectioner’s sugar and remaining 2 Tbsp 2% milk.
  10. Spread chocolate glaze over top of cake.
  11. Refrigerate before serving (at least 1 hr).
