Shrimp & Turkey Sausage Jambalaya

The kid isn’t a fan of bell peppers but was happy to eat around them. Hubby enjoyed it all.

Best if you let set a few before serving as needs to thicken a bit and to give the rice time to soak up the flavors. 😋

NOTE: This recipe started as a keto recipe (before adding rice), so we’re not trying to replicate the same dish as you’d get back home in the South, but rather a tasty category of it’s own.

Shrimp & Turkey Sausage Jambalaya Recipe

Ingredients
  • 1 lb medium raw shrimp (peeled, deveined, and tails off)
  • 1 (14.5 oz) can crushed tomatoes
  • 13 oz Turkey Smoked Sausage, sliced into 1″ rounds
  • 3 cups white rice, cooked
  • 2 cups low-sodium chicken broth
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 yellow onion, diced
  • 1 Tbsp Cajun seasoning (see my Cajun Seasoning recipe)
  • 2 tsp minced garlic
  • 2 tsp dried oregano
Directions
  1. Place 14.5 oz tomatoes, 13 oz sausage, 2 cups broth, 2 chopped celery stalks, 1 chopped red bell pepper, 1 chopped green bell pepper, chopped 1/2 onion, 1 Tbsp Cajun seasoning, 2 tsp minced garlic, and 2 tsp oregano in the Instant Pot’s inner pot and stir to combine.
  2. Close the lid and setting to SEAL.
  3. Cook on High Pressure (or Manual) for 8 min.
  4. Once the cooking cycle is complete, do a quick release by setting to VENT.
  5. Once the pressure pin drops, remove the lid (facing away from you).
  6. Stir in 1 lb shrimp, replace the lid, and set to SEAL.
  7. Cook on High Pressure (or Manual) for 1 min.
  8. Once the cooking cycle is complete, do a quick release by setting to VENT.
  9. Once the pressure pin drops, remove the lid (facing away from you).
  10. Stir in 3 cups cooked rice.
