Snickerdoodles

The BEST Snickerdoodles EVER, IMO. Oh my yum!!!

These were probably my favorite type of cookies in childhood. And I’m not the only one!!!

Snickerdoodles Recipe

Ingredients

• 2 eggs
• 2 3/4 cups all purpose flour
• 1 1/2 + 1/3 cups sugar, divided (1 1/2 cups for batter, 1/3 cup for rolling)
• 1 cup unsalted butter, softened to 64^◦ F
• 2 Tbsp ground cinnamon
• 2 tsp cream of tartar
• 1 tsp baking soda
• 1 tsp vanilla extract
• 1/2 tsp freshly ground sea salt

Directions

1. Line baking sheet(s) with parchment paper then set aside.
2. Preheat oven to 350° F.
3. In a medium bowl, whisk together 2 3/4 cups flour, 2 tsp cream of tartar, 1 tsp baking soda, and 1/2 tsp salt.
4. In a large bowl, cream together 1 1/2 cups sugar and 1 cup 64^◦ F butter on high speed.
5. Add 2 eggs and 1 tsp vanilla extract then mix until well blended.
6. Slowly add flour mixture while beating on low speed, until well combined.
7. In a small bowl, whisk together remaining 1/3 cup sugar with 2 Tbsp cinnamon.
8. Scoop or roll dough into balls and roll in cinnamon mixture to coat each one. See pic above for scoop I use.
9. Place coated dough balls at least 2″ apart on baking sheet. I did NOT space mine enough from batch in pic above!
10. Bake for 8 mins. They won’t necessarily look like they’re done, but they’ll continue to firm from residual heat.
11. Once removed from oven, allow to cool on baking sheet for 5 mins then transfer to a wire rack to fully cool.
