Salsa!

I love the kind of salsa you get in a SoCal generic Mexican food restaurant. Mild, but flavorful. I’m always trying new sauces at the grocery store with fresh or jarred versions, on a hunt to match the flavor – and never can find it.

So… I made my own at hubby’s prompting. We did some taste-testing tonight and made the final tweaks after letting it steep in the fridge a bit this afternoon.

SoCal Restaurant-Style Salsa Recipe

Ingredients
  • 2 green onions, finely chopped (just the green tops)
  • 2 serrano chiles, seeded and minced
  • 2 cups tomatoes, diced
  • 1 cup crushed tomatoes
  • 1/4 cup cilantro leaves, chopped
  • 1/4 cup yellow onion, finely diced
  • 1 Tbsp pickled jalapeños, seeded and finely diced
  • 2 tsp freshly squeezed lime juice
  • 3/8 tsp pink Himalayan salt (for easy math = 1/4 tsp + 1/8 tsp)
  • 1/4 tsp ground cumin
  • 1/4 tsp dried Mexican oregano
Directions
  1. In a food processor or blender, blend 1 cup crushed tomatoes to desired texture. Mixture should be at least a little chunky – I prefer mine more chunky than less.
  2. In a medium bowl (choose ceramic or glass preferably), stir together all ingredients (2 finely chopped green onions, 2 minced serrano chiles, 2 cups diced tomatoes, 1 cup blended crushed tomatoes, 1/4 cup chopped cilantro, 1/4 cup diced onion, 1 Tbsp diced jalapeños, 2 tsp lime juice, 3/8 tsp salt, 1/4 tsp cumin, and 1/4 tsp Mexican oregano), until well combined.
  3. Cover and refrigerate for at least 24 hours. You can eat sooner than that, just beware that the flavors won’t be fully steeped – this tastes best on days 2 and 3 after making!
