Zucchini Patties

I use my stand mixer for most of my recipes and did for this one, but I always give instructions of how to do by hand for those of you who don’t have access to this fun toy.

Hubby helped manage the cake flipping. 😁

These were so good!!! Hubby thought they were a bit rich, but really enjoyed them.

I topped mine w/ sour cream. Yum!!!

You can make your patties any size you prefer. Just keep them thin. And, remember that the larger the diameter, the harder to flip in one shot. I tend to try to keep mine to no more than 4″ in diameter.

I serve these w/ Caesar Salad…

Zucchini Patties Recipe

  • 2 cups zucchini, shredded
  • 2 eggs, beaten
  • 1/2 small red onion, diced
  • 1/2 cup almond flour
  • 1/2 cup freshly shredded Mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 Tbsp extra virgin olive oil (EVOO)
  1. Combine 2 cups shredded zucchini, 2 beaten eggs, diced 1/2 red onion, 1/2 cup almond flour, 1/2 cup shredded Mozzarella, and 1/2 cup grated Parmesan in a medium bowl then mix until well combined.
  2. Heat 2 Tbsp EVOO in a large skillet over medium-high heat on stovetop.
  3. Working in batches, scoop zucchini mixture into hot oil and fry until golden brown, about 2 mins per side.
  4. Remove patties from pan and drain on paper towels (preferably over paper plate to ease clean up).
