The most delicious sandwich ever made!

Man, have I missed alfalfa sprouts! Haven’t been able to find them in stores for years. And avocados and eggs are definitely two of my favorite foods.

Makes 2 large sandwiches. This would also be great as a wrap, especially with a spinach tortilla! Or, can even be served on a bed of lettuce. So many delicious choices!

NOTE: To make this recipe Keto, LowCarb, or Whole30, serve on a bed of lettuce or compliant *bread* (check out my Almond Flour Bread recipe!). To make it Paleo, serve on a bed of lettuce and skip the alfalfa sprouts. Also, be sure for Paleo & Whole30 that you use compliant mayo. To make it LactoVeg, leave out the eggs. To make it OvoVege, leave out the mayo. To make it Vegan, leave out the egg and mayo.

Avocado Egg Salad Recipe

Ingredients
Directions
  1. In a medium bowl, mash 1 avocado
  2. Mix in mayo to taste and seasoned salt to taste until well combined.
  3. Gently mix in 3 chopped hardboiled eggs.
  4. Spread 1/2 of avocado mixture on one slice of bread.
  5. Top with alfalfa sprouts to taste then place second slice of bread on top.
