My sister made a similar dish for my dad that I saw for delivery and REALLY wanted. So we made this version tonight.

With great ingredients like organic coconut aminos and our homemade Celery Salt, this is SOOO good!!! 😋😋😋

Served w/ a Sweet Kale & Broccoli Chopped Salad (decorated w/ cranberries & pepitas).

Thanksgiving Chicken Recipe

Ingredients
  • 2 lbs boneless, skinless chicken breast
  • 1/2 cup light sour cream
  • 3 oz herb-seasoned stuffing mix, crushed
  • 1/2 cup unsalted butter, melted
  • 1 Tbsp Meyer lemon juice
  • 1 tsp coconut aminos
  • 1 tsp garlic powder
  • 1/2 tsp celery salt (See my Celery Salt recipe)
  • 1/16 tsp (small pinch) ground black pepper
  • extra virgin olive oil (EVOO) spray
Directions
  1. Preheat oven to 375 F.
  2. Spray a 9″ x 13″ baking dish with EVOO.
  3. In a medium bowl, mix together 1/2 cup light sour cream, 1 Tbsp Meyer lemon juice, 1 tsp coconut aminos, 1 tsp garlic salt, 1/2 tsp celery salt, and 1/16 (small pinch) tsp ground black pepper – until well-combined.
  4. Add crushed 3 oz of herb-seasoned stuffing mix to a shallow plate.
  5. Dip each piece of chicken first into sour cream mixture, then lay on one side in crushed stuffing mix, then flip to lay on other side – so that chicken piece is mostly fully coated in stuffing mix crumbs, and finally place chicken pieces side-by-side in baking dish.
  6. Drizzle with 1/2 cup melted unsalted butter.
  7. Bake 35 mins, until the thickest part of each breast is 165 F.
